A few months ago I traveled to Chicago for the Sweets & Snacks Expo. While I was there I learned all about the new candy trends and the National Confectioners Association (NCA). Not only was it exciting to sample the newest candy coming to market but also learn the goals of the NCA to fight child obesity. I also had the opportunity to meet with Moon Cheese™ who crunchifies 100% natural cheese into the tastiest all cheese snack possible!

Moon Cheese – Twice Baked Potatoes
5 Servings
Ingredients:
- 5 Potatoes (small to medium)
- 1 (2 oz.) pkg. Cheddar Moon Cheese (1/2 cup crumbled)
- 1 (2 oz.) pkg. Gouda Moon Cheese (1/2 cup crumbled)
- 8 Bacon Strips
- 2 1/2 tbsp Butter (melted)
- 3 tbsp Greek Yogurt
- 4 tbsp Green Onion (chopped)
- 3 cloves Garlic (minced)
- Salt/Pepper (to taste)
Toppings Per Potato
- 2 tbsp Greek Yogurt
- 2 tbsp Bacon Bits
- 2 tsp Chives (chopped)
Microwave bacon 5-8 min. (flip halfway through).
Tear bacon into small pieces.
Clean potatoes, pierce with knife and microwave for 5-7 minutes (depending on your microwave). Let cool.
Cut top off potatoes and scoop out center. Place potato filling in large bowl and set potato skins aside.
Blend cheddar Moon Cheese (1/2 cup crumbled) and gouda Moon Cheese (1/2 cup crumbled).
Add cheddar Moon Cheese crumbs, gouda Moon Cheese crumbs, bacon bits, butter (melted), Greek yogurt, green onion (chopped), garlic (minced), and salt/pepper. Mix well.
Scoop filling into potato skins. Place on baking sheet. Bake @ 425 degrees for 20-25 min.
Remove from oven. Sprinkle 4 tsp additional cheddar Moon Cheese crumbs on top of potatoes. Bake for additional 5 min.
Remove from oven. Top with additional Greek yogurt, bacon bits, and chives. Enjoy!
