Taco Stuffed Sweet Potatoes

Sweet potatoes and I have a special bond especially drizzled with brown sugar and butter. They are so delicious and can be eaten so many different ways like the taco stuffed sweet potatoes recipe I’m sharing with you all today. Sweet potatoes actually have many health benefits too… or so I’ve heard. I’m not going to research it right now but what I do know for sure is that they are very tasty!

Try these scrumptious taco stuffed sweet potatoes! A unique twist on a taco and sweet potato!

Whole 30 Taco Stuffed Sweet Potatoes

Yields: 4-6 servings | Prep Time: 5 minutes | Cook Time: 30 minutes

Ingredients:

  • 4 sweet potatoes, cut lengthwise
  • 1 lb ground beef (grass-fed if possible)
  • 1 red bell pepper, diced
  • 1 Tablespoon Chili Powder
  • 1 teaspoon ground Cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Additional salt and pepper to taste

Taco Stuffed Sweet Potatoes

Toppings:

  • Fresh lettuce, shredded
  • Avocado, chopped
  • Tomatoes, chopped
  • Salsa
  • Cilantro

Directions:

Preheat oven to 350 degrees F. Place the sweet potatoes (cut lengthwise) face down on a baking sheet. Brush the backs with olive oil and sprinkle on salt and pepper. Place in the oven for 30 minutes.

While potatoes are cooking, place ground beef in a large skillet and cook on medium high heat, until browned. Add in spices and diced red pepper. Cook until bell pepper softens (3-4 minutes). Add a few tablespoons of water if needed to keep the meat from drying out.

To serve – use a fork to flatten the inside of the roasted potato slightly.  Add desired amount of ground beef mixture and top with fresh lettuce, chopped tomatoes, avocado, salsa and cilantro.

    What a great idea! Believe it or not, I used to hate sweet potatoes. Well, at least I hated how they tasted when they were loaded with brown sugar and marshmallows at Thanksgiving. I wouldn’t make the dish, and wouldn’t eat it when others made it. I discovered relatively recently, though, that I love them – as fries, cubed and roasted, and cooked with other foods. Just about any way – except the traditional Thanksgiving recipe. I’ll definitely have to give this a try!
