Shrimp Salad Bites Appetizer Recipe

I absolutely love shrimp, especially petite shrimp. They are so delicious! Try these shrimp salad bites as an appetizer recipe. Or, they are great for an afternoon treat. They are easy to make and ready in ten minutes! Plus, these little shrimp salad bites don’t take very many ingredients!

Yields: 30 servings as an appetizer / 4 servings as lunch

Ready in 10 minutesShrimp Salad Bites

Ingredients:

  • ¾ lb cooked shrimp, peeled and tails removed
  • 2 celery stalks, chopped
  • 1 tablespoon red onion, minced
  • 2 tablespoons mayonnaise
  • 1 tablespoon non-fat plain Greek yogurt
  • Salt and pepper to taste
  • 1 large cucumber, sliced
  • Chives, minced

Directions:

Combine shrimp, celery, red onion, mayonnaise, and yogurt in a bowl.  Shrimp Salad BitesSeason with salt and pepper.

Arrange cucumber slices on a platter and top each with a heaping tablespoon of shrimp salad.

Garnish with minced chives.

    i love shrimp salad, and love using the cucumbers instead of the crackers, healthier option. also like that there is not much mayo but i would use low fat mayo. sounds so good.
