Banilla Sandwich Cookies

I can remember my brother having a box of Nilla Wafers in the cabinet at all times when we were growing up. He loved those darn things! My son has taken over his love for them even though I rarely buy any. Here are some fun sandwich cookies to create with your favorite wafers. You could even try using different cookies. They are delicious and a fun treat for your kids.

Banilla Sandwich Cookies

Ingredients:

  • Nilla Wafers
  • Rainbow Nonpareil Sprinkles
  • Creamy Peanut Butter
  • Banana

Directions:

Peel and slice banana into thin disks.

Place one Nilla wafer upside down and spread on a thin layer of creamy peanut butter.

Banilla Sandwich Cookies

Take one banana disk and roll it in sprinkles – completely coating only the edges. Place it on top of Nilla wafer coated in peanut butter.

Banilla Sandwich Cookies

Spread a thin layer of creamy peanut butter on the inside of a second Nilla wafer and place it on top of sprinkle coated banana disk to create a sandwich.

Notes: You may also replace the peanut butter for Nutella.

    I’ll bet these taste great! Bet you can’t stop at just one! With the addition of the rainbow sprinkles, they are almost too pretty to eat. I thought your mash-up of the words vanilla and banana was clever!
