Looking for a quick and easy appetizer for your next social gathering? Try these fiesta chicken taquitos. They are so easy to make and perfect finger foods. They would be perfect for a New Year’s Eve, game day party or a fiesta themed party.
I love using rotisserie chickens for making meals quickly that require shredded pieces of chicken. It’s also great for making chicken and noodles. The chicken is delicious and quick when you grab it already made from the supermarket.
Fiesta Chicken Taquitos
Ingredients:
- 2 Cups Cooked Shredded Chicken (A Rotisserie Chicken works great)
- 10-12 Small Tortillas
- 4 oz. Cream Cheese
- 1 Cup Shredded Cheddar Cheese
- ½ teas. Chili Powder
- ½ teas. Garlic Powder
- ½ teas. Cumin
- 3 Green Onions (chopped)
- 2 Tablespoons Lime Juice
- Tomato, Lime, Green Onions, Sour Cream, Salsa, Guacamole Salsa for Toppings
Directions:
Preheat oven to 350 degrees.
Soften cream cheese in microwave for about 20 seconds. Place in bowl and add chili powder, cumin, garlic powder, lime juice, and chopped onions. Mix well.
Next, add in the shredded chicken and cheese. Mix.
Now, take about 3 tablespoons of mixture and place on the tortilla…
spread it out a little…
then roll tightly.
Place seam side down on a non-stick baking sheet.
Bake for 12-15 minutes or until tortilla is light brown around the edges.
Serve with toppings of your choice and enjoy! If you’re making this for a party you can serve the taquitos with a variety of dipping sauces and toppings.
