First of all, I have never been good at baking but I wanted to take part and help celebrate “National Nutrition Month” with the help of Carrington Farms and T-fal as part of their Healthy Baking Challenge. I love to cook and am pretty darn good at it but I don’t like to have to measure ingredients precisely. I can bake but it’s never been something I’ve done a lot. Today may be the day I have become a baker because these oatmeal chocolate chip cookies are so scrumptious! My husband was even surprised at their deliciousness.
Let’s talk baking sheets before we get into anything else. T-fal sent me their T-fal AirBake Natural cookie sheet set. I have apparently been living under a rock as far as being in-the-know for cookie sheets because these are absolutely AMAZING! Before I baked these cookies I tried cooking crescent rolls on them which are so darn easy to burn. These cookie sheets provide an overall enhanced baking performance with its insulated aluminum sheets and MicroDome technology. This means better browning, no burning, and decreased bake times. Your cookies will never look or taste better and my cresent rolls were evenly cooked throughout. I think this is one of my favorite products ever in the kitchen and probably comes in at a tie at first with my OrGreenic™ Fry Pan.
Okay, let’s talk cookies! Carrington Farms sent me these amazing products: Ready to eat Flax Chia Blend, Liquid Coconut Cooking Oil and Coconut Oil Cooking Spray. I wanted to come up with something to incorporate these while also using my awesome new T-fal cookie sheets. So, I figured cookies would be a great way to go for the Healthy Baking Challenge. Although these could be healthier, they are a much healthier version of the cookies I would normally cook.

On to the Cookies…
Oatmeal Chocolate Chip Cookies with Flax-Chia Blend and Coconut Oil
Ingredients:
- ½ cup peanut butter
- ½ cup Carrington Farms Unflavored Liquid Coconut Cooking Oil
- 1 ½ cups brown sugar, packed
- 2 teaspoons vanilla
- 1 Tbsp corn starch
- 4 Tbsp water, cold
- 1 teaspoon apple cider vinegar
- 1 ½ cups flour
- 1 cup oatmeal
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 Tbsp Carrington Farms Flax Chia Seeds
- 1 cup chocolate chips
Directions:
First, heat your oven to 350°F.
In a large mixing bowl, combine the peanut butter, Carrington Farms Unflavored Liquid Coconut Cooking Oil, brown sugar and vanilla. Set aside.
I love substituting the coconut oil in place of all that butter!
In a separate mixing bowl, combine the Carrington Farms Flax Chia Seeds, corn starch and water. Make sure the corn starch does not get clumpy by keeping it stirred. Add the apple cider vinegar.
Let set for a few minutes. Pour this mixture into the peanut butter mixture and stir well.
In a separate mixing bowl, combine the dry ingredients including the flour, oatmeal, baking soda, baking powder and salt. Stir until combined well. If too dry, add more water.
Combine the dry ingredients with the peanut butter mixture. Add the chocolate chips.
Create 1 to ½ inch balls and place on your T-fal cookie sheet. Place balls one inch apart.
Bake 10-15 minutes. Mine took about 15 minutes but my oven is ancient and everything always takes longer. Let your cookies sit for a few minutes and then gobble them down as quickly as you can! They should have a delicious chewy center.
