Since the cold air is setting in, it’s time to start thinking about comfort foods. There’s nothing better than a homemade dinner for my family to enjoy after a long day of working, driving the kids around, and running errands. We don’t have time to spend hours in the kitchen every night so I like to think up quick recipes that doesn’t sacrifice the taste of a home cooked meal my family loves.

While I was in Walmart the other day I came upon the Progresso soup. I knew I wanted to fix a southwestern style meal in under 30 minutes so I was excited to find the Progresso Light Zesty Santa Fe Style Chicken soup. It was perfect! After I grabbed a few cans of it I was sure to grab a package of the buttermilk biscuit mix. I thought I’d try making a quick southwestern style chicken pot pie. Sounded delicious to me!

With the Progresso Light Zesty Santa Fe Style Chicken soup, biscuit mix, eggs and milk I was able to create a very delicious, quick homemade dinner in less than 30 minutes! Because Progresso has real, quality ingredients, making a delicious homemade meal is easier than ever. I love that Progresso soups has quality ingredients, is easy to cook with and has my family fully satisfied for dinner.

Easy Southwestern Chicken Pot Pie

The following recipe makes two to three servings. Use a casserole dish or larger skillet and double or triple the ingredients to make it for larger families.

Ingredients:

Southwestern Chicken Pot Pie

1 can Progresso Light Zesty Santa Fe Style Chicken, drain half of the liquid
1 cup buttermilk Bisquick™ mix
1/2 cup milk
1 egg
Sour cream, garnish
Salsa, garnish
Shredded cheese, garnish

Directions:

Heat oven to 400°F.

Pour can of Progresso Light Zesty Santa Fe Style Chicken into cast iron skillet. Be sure to drain half the liquid from the soup or you’ll have a soupy pot pie.

Stir together the biscuit mix, milk and egg with fork until well blended.

Southwestern Chicken Pot Pie

Pour over Progresso Light Zesty Santa Fe Style Chicken in skillet. It may look soupy but the mix on top will fill out the skillet.

Bake 20 minutes or until golden brown.

Top with shredded cheese, salsa and sour cream.

    I love to find quick meals that are delicious to prepare for my family. This looks fast, easy, and delicious. I bet you could use cornbread mix instead of biscuit mix for a little different taste.
