I love getting together with my family for the holidays. It’s so much fun to tweak old recipes or try baking up new memories for the holidays.

Sam’s Club makes it easier for my family to get creative in the kitchen while being able to buy in bulk to feed a crowd! When I visited Sam’s Club a few days ago I was sure to grab two of my favorites: Pillsbury™ Ready to Bake Sugar Cookies and Hillshire Farm Cocktail Smokies. The sugar cookies are perfect for making one of our favorite recipes, Gingersnap Bars and cocktail smokies make the perfect appetizer.

Gingersnap Bars

Prep: 15 min | Total: 3 hr 45 min | Servings: 36

Ingredients:

1 package (16 oz) Pillsbury™ Ready To Bake!™ sugar cookies
2 cups coarsely crushed gingersnap cookies (about 30 cookies) (from 1-lb box)
2 packages (8 oz each) cream cheese, softened
⅓ cup sugar
1 teaspoon vanilla
2 eggs
3 tablespoons caramel topping

Steps:

Heat oven to 350°F. Arrange sugar cookies in bottom of ungreased 13×9-inch pan; press evenly.

Sprinkle with 1 cup of the crushed gingersnap cookies. Bake 15 to 20 minutes or until sugar cookies are light golden brown. Cool 10 minutes.

Meanwhile, in large bowl, beat cream cheese, sugar, vanilla and eggs with electric mixer on medium speed until smooth.

Spread evenly over baked crust. Sprinkle with remaining 1 cup crushed gingersnap cookies.

I actually baked my own gingersnap cookies from scratch but you can find them at the store. They happened to be out of stock when I went but since I already had the ingredients for them it was quick and easy to bake them at home.

Bake 25 to 30 minutes or until filling is set. Cool 30 minutes. Refrigerate about 2 hours or until well chilled. Drizzle with caramel topping just before serving. For bars, cut into 6 rows by 6 rows. Store covered in refrigerator

Tip: To easily remove bars from pan, line pan with foil, extending over sides of pan. Before cutting bars, lift from pan using foil handles.
