It has been an exciting season for my favorite team, the Kansas City Chiefs. My family loves cheering them on every game either tailgating or homegating. I love being able to create a fun menu for every game with lots of delicious appetizers. So I was excited to be able to work with Avocados From Mexico and Forward Influence on this recipe to make your game day so delicious! I love using Avocados From Mexico in my recipes because they’re delicious, healthy, and always in season. If you check out Avocados From Mexico’s website you’ll find a lot of great recipe ideas from appetizers to main dishes and even beverages! I love their tuna and avocado tostaditas recipe but decided I might need to tweak it to make something my guests will also like for those game day parties. And so, I was inspired to make bean and avocado tostadas that are perfect for party guests.
I knew I wanted to use my favorite avocados: Avocados From Mexico and TABASCO® Sauce in my recipe. The Avocados From Mexico will make your dish so delicious! The TABASCO® Sauce is the perfect addition and can be used as a condiment or ingredient in any recipe. Plus, it adds a kick of flavor for those like like a little spice in their meals. It accents and deepens the flavors as an ingredient to my delicious tostadas.
I decided to switch out the tuna for beans since not all of my guests enjoy tuna. And I made my tostadas with fewer ingredients for a quick, easy appetizer on game day. Of course, no game day is complete without washing everything down with some ice cold Lime-A-Rita.
Bean and Avocado Tostadas
Ingredients:
3 Avocados From Mexico
1 Can Black Bean Refried Beans
1 Package Small Corn Tortillas
Pico de Gallo
1 Cup Greek Yogurt
2 Limes, juiced (separated)
Cilantro
Fresco crumbled cheese
TABASCO® Sauce
Preheat oven to 425 degrees.
Cut corn tortillas into 3-4 inch circles. (Reserve trimmings for another use.)
Line a sheet pan with parchment paper. Brush corn tortillas with oil on both sides and place on parchment lined pan. Top with an additional piece of parchment and another sheet pan to weight down.
Continue preparing pans of tortillas in this manner until all are used.
Place pans in oven and bake until tortillas are crisp and golden brown, about 8 minutes. Remove from oven, remove top pan and top parchment, season with sea salt and allow to cool.
Meanwhile, take the ripe Avocados From Mexico and puree them in a food processor with the juice of one lime. Heat the black bean refried beans on the stove top. Finely chop the cilantro.
Mix the juice of one lemon with the yogurt.
Now it’s time to assemble the tostadas! Take one corn tortilla. Layer with a spoonful of refried beans and a spoonful of Avocados From Mexico mixture. Top with yogurt mixture, pico de Gallo, cilantro and the Fresco cheese. If you want an extra kick of flavor be sure to add your favorite TABASCO® Sauce.
You can top these fun appetizers with any ingredients you like. Another fun idea would be to have a tostada bar with a variety of toppings for your guests and they can assemble their own!
