The summer after our high school graduation, my best friend and I took a road trip to Texas to visit some of my family. While we were there my uncle’s wife baked us the most delicious artichoke dip. Being from the hills of northern Missouri, I had yet to experience artichokes. I have been completely hooked ever since! So, I was intrigued when I asked to work with Reese to learn more about their Reese Hearts of Palm. I knew I loved Reese Artichokes so I was excited to try their Hearts of Palm product as well.
This time there was no need to pack my bags to get the taste of the border. Reese Specialty Foods allow me to experience the finest foods from across the globe from the comfort of my kitchen! Heat your tortilla shell, add hearts of palms and artichokes. Top with salsa, cilantro and green onions. Serve with spicy cabbage slaw (recipe below) and lime.
Spicy Cabbage Slaw

- 1 quart of prepackaged red/white cabbage or just use one small head of White Cabbage
- 1 small onion, sliced thin
- 1 carrot, finally grated
- 1 tbsp Kosher salt
- 1 1/4 cups White vinegar
- 1/8 cup of sugar
- 1/8 tsp cinnamon
- 1/8 tsp nutmeg

Directions:
In a bowl combine the sugar, cinnamon, nutmeg, ground cloves. You will only use about 1/8 tsp of this mixture. Store the remaining mixture in an air tight container to use another time.
In another bowl combine the cabbage, red onion, carrots and 2 tablespoons of kosher salt. Set aside.
In a sauce pan over medium high heat combine vinegar, sugar, pepper and 1/2 cup of water and bring to a boil.
Once boiling pour the mixture over the cabbage and make sure all is submerged.
Let this sit at room temperature until cool. Once cooled, transfer to a sealed container and refrigerate until ready to use. The cabbage mixture can be kept for up to two weeks in the refrigerator until ready for use.
