After attaching my new Mockmill to my KitchenAid mixer I honestly wasn’t sure where to start. I studied everything I could online about grain mills, how they work, what grains to use, what spices to use and so on. One thing I knew is that I couldn’t wait to get started with my Mockmill.

I drove down to our local Amish country store to stock up on some grains and whole spices. I love stocking up there when I don’t have them on hand because everything is sold in bulk for much cheaper than any local grocery store. Of course, I couldn’t resist coming home with some fresh Jersey cheese that I could munch on while enjoying my new Mockmill and a glass of wine… That cheese is so delicious with wine!

There’s so many recipes I want to share with you using my Mockmill but today I’ve decided to share a mini donuts recipe. I am thinking next I’ll try homemade cinnamon rolls, pizza crust and homemade bread. Oh the possibilities are endless!

First, I attached my Mockmill to my KitchenAid mixer. Very simple. The Mockmill comes with an easy to understand instruction booklet. I was ready to start grinding. I opted for using a bag of wheat berries I got at the Amish store.

Adjust your Mockmill to the setting you want from fine to coarsely ground. Turn it on and toss in the wheat berries. I added 2 cups of fresh wheat berries to the mill. Super easy! The end result is several cups of delicious fresh flour.

Blueberry Mini Baked Cake Donuts

Prep: 15 minutes | Cook: 10 minutes | Total: 25 minutes | Servings: 12

Mini donuts fresh flour

Ingredients

  • ¼ T baking soda
  • ½ T baking powder
  • 1 cup fresh ground flour (using your new Mockmill)
  • 1/3 cup sugar
  • 1/8 T ground nutmeg
  • 1/3 T salt
  • 50 fresh blueberries
  • ¼ cup greek yogurt
  • 1 T vinegar
  • 1/3 cup heavy whipping cream
  • 1 egg
  • 1 T butter
  • 1 T vanilla extract
  • 2 cups powdered sugar
  • ¼ cup hot water
  • 1 drop blue food coloring
  • 1 drop red food coloring

Instructions

Preheat oven at 350 degrees F.

Mix baking soda, baking powder, flour (use your freshly ground flour), sugar, ground nutmeg, and salt into large mixing bowl.

Melt butter in small pan or microwave. Beat 1 egg in medium mixing bowl. Add Greek yogurt, vinegar, heavy whipping cream, butter and vanilla extract to egg. Mix well.

Add egg mixture to dry ingredient mixture in large mixing bowl.

Add 25 smashed blueberries.

Stir until all ingredients are evenly distributed.

Scoop mixture into piping bag. Add batter to 12-count mini donut pan (non-stick), filling each donut halfway full.

Bake for approximately 10 minutes.

In the meantime, add 25 smashed blueberries, 2 cups powdered sugar, ¼ cup hot water, 1 drop blue food coloring, and 1 drop red food coloring. Stir well. Set aside.

Remove donuts from oven and set aside to cool for 2 minutes.

Drizzle blueberry icing atop donuts. Serve and enjoy your mini delights!

Keep any leftovers (if that is possible) in sealed containers to preserve freshness.
