I’ll be honest, I’ve never given much thought to the syrup I grab at the store. I’ve always used that same old brand, time and time again. I’ve never given it a second thought. That was until I met the Crown® Maple products at Natural Products Expo last month. Crown Maple and I had an instant connection from their various flavors of organic syrup to their maple cayenne hot sauce. I even tried a shot of their smooth Crown Maple Bourbon! It was just as tasty as it sounds!
Since Crown Maple sent me such a big selection of their products which I also got to try first hand at their booth, I knew I wanted to incorporate a few of them into a special recipe.
I used the Crown® Maple Sugar and Maple Cayenne Hot Sauce to make Jalapeño & Bacon Cornmeal Pancakes! Yes, you read that right and they are mouth watering! I topped them with the Crown Maple® Applewood Smoked Organic Maple Syrup but you can use any flavor you like. Crown Maple has a large selection of flavored syrup!

Jalapeño & Bacon Cornmeal Pancakes Recipe
INGREDIENTS:
- 2 Jalapeños (finely diced)
- 6 Slices Bacon (thinly sliced)
- 1 ½ Cup Flour
- 1 Cup Cornmeal
- 2 Tbsp Crown® Maple Sugar
- 3 Tsp Baking Powder
- 2 Eggs
- 1 ⅓ Cup Milk
- ¼ Cup Canola Oil
- 1 Tbsp Maple Cayenne Hot Sauce from Horseshoe Brand and Crown Maple
- Crown Maple Applewood Smoked Organic Maple Syrup
INSTRUCTIONS:
Cook bacon on medium heat for approximately 5 minutes, turning throughout.
Add jalapeño peppers. Continue to sauté in bacon grease for approximately 10 minutes, or until bacon is slightly browned.
Remove from heat. Drain grease. Pat bacon and jalapeños dry with paper towel. Set aside.
Whisk flour, cornmeal, sugar and baking powder in large bowl. Set aside.
Whisk eggs, milk, canola oil and hot sauce in small bowl. Add egg mixture to flour mixture. Stir well.
Add cooked bacon and jalapeños to pancake batter. Combine well.
Add butter to stove top pan at medium heat and pour approximately 1/3 cup pancake batter into pan (to make each pancake). Cook each pancake for approximately 1 minute on each side. Remove from pan. Serve immediately. Top with extra cooked bacon and jalapeños and Crown Maple Syrup!
Please note that this recipe can be made with all gluten-free ingredients.
