While attending the Natural Products Expo last month with Wendy’s Bloggers, I had the opportunity to meet with Back to Nature. Granola was Back to Nature’s first product when they started over 50 years ago but they’ve expanded that product line to amazing tasting cereals, crackers, nuts and cookies. They provide everyday foods that are simply delicious, simply good. You’ve probably seen their products in health food stores but you can find them in many of your major supermarkets as well.
One of my must-haves from their product line is the Back to Nature Classic Creme Cookies. These cookies are like heaven in your mouth! They easily got the approval from my son and picky husband. I knew I had to think of a recipe idea to create with these cookies. So, I made mouth-watering Cookies and Cream Cupcakes. These cupcakes are perfect for so many events whether it be family get-togethers, Mother’s Day, school or just for enjoying at home, they are sure to be a favorite.

Cookies and Cream Cupcakes Recipe
Yields: 24 cupcakes
Prep Time: 15 minutes | Cook Time: 20 minutes | Total Time: 35 minutes
Ingredients:
1 box Chocolate Cake Mix (plus required eggs, oil and water as directed on box)
2 packages Back to Nature Classic Creme sandwich cookies
8 ounces cream cheese, softened
½ cup butter, softened
3 ¾ cups powdered sugar
1 teaspoon vanilla extract

Preheat oven to 350°F
Line muffin tin with 24 cupcake liners and place a Back to Nature classic creme cookie at the bottom of each.
Prepare cake mix according to box directions.
Take half of the remaining cookies and place them in a ziplock bag and crush the cookies (a rolling pin worked nicely for this!). Dump the broken up cookie crumbles (cream filling and all) into the chocolate cake mix and combine.
Fill each cupcake liner, two-thirds full with prepared cake mix. Bake as directed.
While cupcakes are baking, prepare the frosting.
For the frosting, cream together softened butter and cream cheese. Add vanilla extract, and then slowly add in the powdered sugar until well blended.
Add the remaining cookies to a food processor and pulse until cookies become a fine crumb consistency. Add to the prepared frosting, and mix well to combine. Place the frosting in the fridge for about 30 minutes before icing your cupcakes so the frosting does not melt.
After cupcakes have cooled completely, add desired amount of frosting. You can use a piping bag and tip if you like. Amazon sells the Cake Decorating Tip Set by Chefast that is a great set and cheap.
Serve cupcakes within 30 minutes of icing or place in the refrigerator until served.
TIP: If using a piping bag and tip to frost, you may get some cookie chunks in the frosting that will plug up the tip. Simply use a toothpick to push through the end of frosting tip and break up the chunk to allow the frosting to flow back through.
