If you’re planning a Cinco de Mayo party, there are some things you just have to have. Sombreros, mariachi music and good friends are all on the “must list.” However, you can’t forget about everyone’s favorite part: the food. It’s just not a fiesta without a few fun and festive treats to munch on. Here are some quick and easy recipe ideas for your Cinco de Mayo party:

1. Layered taco dip

We all love tacos, but they’re not always the best fit for a gathering where partygoers are trying to mingle. A platter with chips and dip is easier to pass around or grab as you go by the buffet table. With this simple taco dip, you can have the best of both worlds. Just take your favorite dish and layer it with your desired taco toppings. You’ll want to include the usual suspects like refried beans, guacamole, pico de gallo and lots of shredded cheese. You can also add in some meat by including a layer of cooked ground beef, marinated skirt steak or even braised carnitas. Your guests can dip in homemade or store-bought tortilla chips for the flavor of a taco without all the mess!

2. Cinnamon and sugar chips with fruit salsa

This recipe can be served as an appetizer, dessert or both. Simply take a stack of tortillas and cut them into quarters. Then, spread them out evenly on a baking sheet and sprinkle on a dusting of cinnamon and sugar. Bake at 400 degrees Fahrenheit for around 15 minutes and you’ll have golden brown triangles of deliciousness. Whip up some fruit salsa by dicing strawberries, pineapples, mangoes and any other type of fruit you fancy. Toss with a teaspoon of sugar and a squirt of lime juice for a refreshing way to begin or end your Cinco de Mayo meal.

3. Mexican brownie bites

For some people, dessert isn’t really dessert without a little chocolate. If you’ve got some chocoholics coming over, they’ll go crazy for these cocoa creations. Just prepare your preferred box of brownie mix according to the package instructions. Next, add in a teaspoon of cinnamon and ½ teaspoon of cayenne pepper. Blend the spices into your brownie batter with a spatula before pouring the mixture into a mini cupcake pan. You should refer to your package for the bake time, but most batches will be done in about 30 to 40 minutes at 350 degrees Fahrenheit. After the bites are finished, remove them from the oven and let them cool. When you’re ready to serve, you could even top each brownie with a chocolate-dipped slice of fresh jalapeno.
