Oatmeal Chocolate Chip Cookies with Flax-Chia Blend and Coconut Oil

Oatmeal Chocolate Cookies

First of all, I have never been good at baking but I wanted to take part and help celebrate “National Nutrition Month” with the help of Carrington Farms and T-fal as part of their Healthy Baking Challenge. I love to cook and am pretty darn good at it but I don’t like to have to measure ingredients precisely. I can bake but it’s never been something I’ve done a lot. Today may be the day I have become a baker because these oatmeal chocolate chip cookies are so scrumptious! My husband was even surprised at their deliciousness.

Oatmeal Chocolate Cookies

Let’s talk baking sheets before we get into anything else. T-fal sent me their T-fal AirBake Natural cookie sheet set. I have apparently been living under a rock as far as being in-the-know for cookie sheets because these are absolutely AMAZING! Before I baked these cookies I tried cooking crescent rolls on them which are so darn easy to burn. These cookie sheets provide an overall enhanced baking performance with its insulated aluminum sheets and MicroDome technology. This means better browning, no burning, and decreased bake times. Your cookies will never look or taste better and my cresent rolls were evenly cooked throughout. I think this is one of my favorite products ever in the kitchen and probably comes in at a tie at first with my OrGreenic™ Fry Pan.

Okay, let’s talk cookies! Carrington Farms sent me these amazing products: Ready to eat Flax Chia Blend, Liquid Coconut Cooking Oil and Coconut Oil Cooking Spray. I wanted to come up with something to incorporate these while also using my awesome new T-fal cookie sheets. So, I figured cookies would be a great way to go for the Healthy Baking Challenge. Although these could be healthier, they are a much healthier version of the cookies I would normally cook.

Here’s more about each of these great products:

Carrington Farms Coconut Oil Cooking Spray: Convenient, easy-to-use, nonstick zero calorie spray, Carrington Farms Coconut Oil Cooking Spray is ideal for anything from pancakes, eggs, and baking goodies! This all-natural coconut spray easily coats baking pans and keeps food from sticking to cookware, making cleanup effortless.

Carrington Farms Unflavored Liquid Coconut Cooking Oil: All-Natural, Gluten-Free, Hexane-Free, and Non-GMO, this liquid coconut oil is a fantastic alternative to traditional oils (vegetable, olive, canola, corn, etc.). And while this liquid coconut oil retains all of the health benefits of traditional coconut oil without the odor/flavor of coconuts, it also remains liquid in form. Carrington’s Liquid Coconut Cooking Oil has a higher heat point than traditional olive oils and is a perfect addition for your baking dishes.

Carrington Farms Flax Chia Seeds: Combining the best health benefits of both Flax and Chia seeds, the Carrington Farms Flax Chia Blend is an excellent source of energy and nutrients for lasting heart health and boosted metabolism. Throw them in the mix for a healthy twist on your favorite baked good classics.

  1. Oatmeal Chocolate Chip cookies are one of my favorites! SO delicious and addictive. I notice that chia seeds are very popular these days in recipes lately. I’ve yet to try it, but I will! 🙂

  2. Im so excited to try these yummy looking cookies. I love substituting coconut oil in my baking.

  3. I love this recipe! Awhile back, I tried a store refrigerated version of these because I was not sure how they’d taste. The combination of chocolate chips and oatmeal didn’t initially sell me at first. They were a pleasant surprise for a flavor combination! Thanks for the post. I look forward to making these myself, soon!

  4. I’m gluten free so I did the GF version, amazing! Thanks for the recipe! Love your products!

  5. These sound delicious! I’m always looking for ways to get chia and coconut into the kids, especially since I have one who says he doesn’t like it.

  6. I have never tried flax chia seeds before and this would be the perfect way for me to try them. The cookies sound and look so delicious.

  7. Wow! These do sound good especially since the coconut oil has no coconut flavor! I’m not a big coconut flavor person!

  8. These look delicious. I will have to make them for my family. We love both oatmeal and chocolate chip cookies.

  9. ive not made cookies with these ingredients before…like to try healthier versions!

  10. I use coconut oil in most of my baking now, it cooks so nicely and is better than butter or canola oil.
